In a large bowl, combine the oats, grated apples, and yogurt. Stir well.

Crack in the eggs and mix until fully combined.

Stir in the baking powder, cinnamon, and salt. Add optional raisins, nuts, or chia seeds if using.

- Muffins: Spoon the mixture into a greased or lined muffin tin (about 6β8 muffins).
- Bake at 350Β°F (175Β°C) for 25β30 minutes, until golden on top and set in the center.
- Loaf/pan: Pour into a small greased baking dish and bake for 30β35 minutes.
