π§π Cheesy Chicken Meatballs
π Ingredients
- 1 lb (450 g) ground chicken
- 1 cup shredded cheddar cheese (or mozzarella/Colby Jack)
- Β½ cup breadcrumbs
- 1 large egg
- 2 cloves garlic, minced
- 1 tsp onion powder
- 1 tsp paprika
- Β½ tsp black pepper
- Β½ tsp salt
- 2 tbsp milk
- 1 tbsp chopped parsley (optional)
π©βπ³ Instructions
- Preheat oven to 400Β°F (200Β°C). Line a baking tray or lightly grease a dish.
- In a large bowl, combine:
- Ground chicken
- Breadcrumbs
- Egg
- Milk
- Garlic, spices, salt & pepper
- Half of the shredded cheese
- Mix gently (donβt overmix).
- Shape into meatballs and place in the dish.
- Sprinkle remaining cheese on top of each meatball.
- Bake 20β25 minutes until cooked through and golden.
- Optional: broil 2β3 minutes for extra cheesy browning.

- Keep hands slightly wet when rolling meatballs.
- Add a cube of cheese inside each meatball for a surprise melt π€€
- Works great in the air fryer too (380Β°F / 190Β°C for 12β14 minutes).
