
Instructions
1. Prepare the potatoes
- Peel the potatoes.
- Grate them using the fine or medium side of the grater.
- Squeeze out as much water as possible (very important for crispiness).
2. Add the onion
- Grate or finely mince the onion.
- Mix it with the potatoes.
3. Make the batter
Add to the bowl:
- eggs
- flour
- salt
- pepper
Mix well until combined.
4. Fry
- Heat a good amount of oil in a pan.
- Add 2β3 tablespoons of potato mixture for each pancake.
- Flatten with a spoon.
- Fry on medium-high heat until golden brown and crispy on both sides.
5. Drain & Serve
Place on paper towels to remove excess oil.
