๐ Ingredients
- 1 cup (125 g) all-purpose flour
- 2 eggs
- 1 1/4 cups (300 ml) milk
- 1/4 cup (60 ml) sparkling water (traditional trick for lightness)
- Pinch of salt
- 1 teaspoon sugar (optional, for sweet filling)
- 1 teaspoon vanilla extract (optional)
- 1 tablespoon oil or melted butter (plus extra for frying)

- Make the Batter
In a bowl, whisk eggs, milk, sparkling water, salt, sugar, and vanilla.
Gradually add flour and whisk until smooth and thin.
Let rest for 20โ30 minutes. - Cook the Pancakes
Heat a lightly greased nonstick pan over medium heat.
Pour a small ladle of batter and swirl to coat the pan thinly.
Cook about 1 minute per side until lightly golden.
Stack on a plate and repeat. - Fill & Roll
Spread filling over each pancake, roll or fold, and dust with powdered sugar.
